I haven’t even eaten yet today and this just has my stomach growling up a storm!  Head over for the recipe.

Ingredients:

  • 2 Tablespoons canola oil
  • 1 chicken (about 2 1/2-3 pounds), cut into serving pieces, patted dry with paper towels, and seasoned with kosher salt and freshly ground black pepper
  • 3/4 – 1 pound andouille sausage or kielbasa, sliced into 1/4-inch rounds
  • 1 medium onion, finely diced
  • 2 stalks celery, finely diced
  • 1 green bell pepper, seeded and finely diced
  • 1 red bell pepper, seeded and finely diced
  • 2 cloves garlic, minced
  • 1 teaspoon cayenne pepper or to taste
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 cups white rice
  • 3 bay leaves
  • 3 cups chicken stock
