So, with temperatures nearing the 90s in West Palm and feeling like it’s well over, I asked myself… “what could I possibly share to turn these dehydrated beings into happy & productive south Floridians once again?”.  Like a snake, the idea bit me… The watermelon granita over at What Katie Ate!  Feel free to head over to her beautiful blog to express gratitude.

The recipe calls for:

  • 1 lg fresh, seedless watermelon, peeled and roughly chopped
  • 1 tbsp freshly squeezed lime juice
  • 1/4 tsp salt
  • 1/4 tsp dried chili flakes

Place the watermelon, lime juice, salt and chili flakes in a processor until pulpy.  Pass through a sieve. Pour the sieved liquid into a wide metal baking tray or freezer proof dish and freeze for approximately 2-3 hours or until ready to serve.

When ready, use a fork to scrape the granita into shards and serve in dessert glasses.
